After a nocturnal visit from Merrill at your estate you Chucho ask her to move in with you.You must complete her final companion quest to achieve a complete romance with Merrill.

If Bethany survives past Act I then she will appear again during later quests, but she will no longer be available as a playable party member.

Then you have to fight for her life (or give her up, if you’re a bastard) and it’s all very romantic. While Isabela is technically an optional companion in Dragon Age 2

Romancing companions in The Veilguard will work pretty similarly to Dragon Age: Inquisition, from what we know so far. You'll take on quests relevant to your companions' backstories and, if you want to be more than friends, choose flirtatious dialogue lines at opportune moments.

Recruiting Isabela is optional. You will need to complete the “Fools Rush In” quest for her to become an active party member. If you do not complete this quest you will not be able to recruit her, even then she is important for parts of the story.
